Bacon Mac + Cheese Goblets

Bacon Mac + Cheese Goblets

Makes 12 cups

For the base:

  • 12 wonton wrappers

For the goodness:

  • Your favorite mac & cheese – it was midnight, so in the interest of time, I used Annie’s, instead of starting from scratch
  • 6 strips bacon, diced
  • 6 slices of cheddar cheese, cut into quarters

Cookware:

  • 12 hole cupcake pan
  • medium sized sauce pan
  • cake pan
  • strainer

What to do:

  1. Preheat oven 350° F and bring water to boil in sauce pan.
  2. Cook that bacon in the oven until it’s nice and crispy. Dice it nice.
  3. Boil mac & cheese to your liking, strain and toss back in sauce pan.
  4. Take half of the bacon and mix with mac and cheese.
  5. Push one wonton wrapper into each cupcake hole – make sure to press firmly against walls of holes to maximize fill space.
  6. Bake wonton wrappers, until slightly browned on top corners and remove from oven.
  7. Lay a quarter piece of cheese on the bottom of each cup and fill with mac and cheese mix.
  8. Lay another quarter piece of cheese on top of mac and cheese mix and top with bacon.
  9. Bake cups for about 7 minutes or until cheese is melted, corners of wontons are browned and bacon is hissing “eat me” at you.
  10. Take tray out of oven and let cool for 5 minutes.
  11. Eat and enjoy your food coma.

S’mores Goblets

S’mores Goblets

Recipe

Makes 12 cups / 96 pieces

For the base:

  • 2 cups graham crackers, crushed
  • 6 tbs butter, melted
  • 1/3 cup sugar

For the goodness:

  • 24 pieces Hershey’s chocolate
  • 24 marshmallows, halved or quarted

Cookware:

  • 12 hole cupcake pan
  • mixing bowl

What to do:

  1. Preheat oven 350° F.
  2. Put graham crackers in a bag and crush with a rolling pin.
  3. Mix crushed graham cracker crumbs in with sugar and butter and mix.
  4. Push mixture into cupcake pan. Make sure to coat bottom and sides – like a pie.
  5. Throw cupcake pan in oven for 5 – 7 minutes or until crust is darkened on top edges.
  6. Remove pan and place two chocolate rectangles side by side in each cup (make a square).
  7. Top with marshmallows.
  8. Put pan back in the oven for about 5 – 10 minutes or until marshmallows are browned to your liking.
  9. Take pan out, let the deliciousness sit and cool off and then put in freezer for 1 hour (it’s easier to remove from pan and cut when frozen).
  10. Eat and enjoy your food coma.

Pizza Goblets

Pizza Goblets

Makes 12

For the base:

  • 3/4 lb pizza dough, rolled, cut into 3” diameter circles
  • 1 tbs olive oil
  • 2 cloves garlic, minced

For the goodness:

  • 1/2 red pepper, diced
  • 1/4 bermuda onion, diced
  • 3 pieces of bacon, diced
  • buncha pepperoni, diced

Cookware:

  • 12 hole cupcake pan
  • frying pans (1 for bacon)

What to do:

  1. Preheat oven 350° F. Make that bacon. Make it crispy.
  2. Flatten pizza dough and cut into 12 – 3” diameter circles.
  3. Mix olive oil and garlic and rub that dough.
  4. Grease and fill each cup in cupcake pan with dough circle.
  5. Lay down sauce, cheese, toppings.
  6. Repeat 4 til full.
  7. Top with more bacon.
  8. Put in the oven for 18 minutes or until brown.
  9. Eat and enjoy your food coma.

Apple Crisp Goblets

Apple Crisp Goblets

Makes 24

For the base:

  • 24 wonton wrappers

For the apple crisp:

  • 10 cups apples, peeled, cored and sliced
  • 1 cup white sugar
  • 1 tbs all-purpose flour
  • 1 tsp ground cinnamon
  • ½ cup water

For the topping:

  • 1 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup dark brown sugar
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ½ cup butter, melted
  • your favorite ice cream

Cookware:

  • mixing bowl
  • apple corer
  • potato peeler
  • 2 – 12 hole cupcake pans
  • 9”x13” pan

What to do:

  1. Preheat oven to 350° F (175° C).
  2. Spread the sliced apples evenly in the 9”x13” pan.
  3. Mix white sugar, 1 tbs flour and cinnamon and sprinkle on top of the apples.
  4. Pour water evenly over the entire pan.
  5. Combine oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together and crumble evenly over apple mixture in pan.
  6. Bake for 40 – 45 minutes.
  7. Push the wonton wrappers in the cupcake pan and fill with 1½” apple crisp squares.
  8. Top with ice cream and serve.
  9. Eat and enjoy your food coma.

Burger Goblets

Burger Goblets

Makes 12

For the base:

  •  12 wonton wrappers

For the meat:

  • 1 lb ground turkey / beef
  • 2 tbs worcestershire
  • 4 cloves garlic, chopped
  • ½ yellow onion, diced

For the toppings:

  • 3 pieces of cheddar cheese cut in quarters
  • ¼ red onion, diced
  • 1 roma tomato, chopped
  • 3 or 4 pickle chips cut in quarters
  • 1 or 2 strips of bacon, diced
  • ketchup
  • mustard

Cookware:

  • mixing bowl
  • 12 hole cupcake pan
  • frying pans (1 for turkey, 1 for bacon)

What to do:

  1. Mix ground turkey in bowl with yellow onion, garlic and worcestershire sauce and cook through on a frying pan.
  2. Put bacon in oven at 350° until cooked to your liking. When finished, dry off grease, dice, and put to side.
  3. Push the wonton wrappers in the cupcake pan, fill with cooked meat, top with cheese and put in oven for about 8 – 10 minute or until wontons are brown, crispy and crunchy.
  4. Remove cupcake pan from oven and top with fixings.
  5. Eat and enjoy your food coma.

Breakfast Goblets

Breakfast Goblets

Makes 12

For the base:

  • 12 wonton wrappers

For the goodness:

  • 8 eggs
  • 1/4 cup milk
  • 2 cloves garlic, chopped or minced
  • ½ yellow onion, diced
  • 1 to 2 tbs olive oil OR butter
  • 10 – 12 pickled jalapeño, diced (I liked pickled, because they are saltier)

For the toppings:

  • 3 pieces of Tillamook cheddar cheese, cut in quarters
  • 3 or 4 strips of bacon
  • 1 avocado

Cookware:

  • 12 hole cupcake pan
  • frying pans (1 for turkey, 1 for bacon)

What to do:

  1. Preheat oven to 350° and cook that bacon crispy good.
  2. Warm olive oil / butter and minced garlic on frying pan and sauté onions until slightly brown. Then toss in jalapeño.
  3. Whisk milk and eggs together and scramble in with the oniony/jalapeño/garlic/butter goodness on frying pan.
  4. Grease cupcake pan, push in wonton wrappers and bake until corners brown and the whole of each wonton is crispy (need to do this because the egg will prevent the wonton from crisping later on and no one enjoys what I like to call “sog factor”).
  5. Remove cupcake pan and fill each wonton wrapper with scrambled egg goodness. Top with cheese quarter and then sprinkle bacon on top.
  6. Put the cupcake pan back in the oven and bake until cheese is melted.
  7. Remove pan, let cool and remove each goblet with a fork.
  8. Top with avocado and serve.
  9. Enjoy your food coma(s).
